A special dish at Le Select Resto in Toronto

Rarely do I see such an esoteric dish as cockscombs mentioned on a menu in Toronto, let alone in France. This dish is a true representation of L'ancienne cuisine! I have seen cockscombs represented creatively in one one of Chef Anthony Rose's dishes at the Drake, very briefly. I had seen it in a dish on my recent trip to the region around San Sebastian, and now I have found a dish devoted to cockscombs at Le Select in Toronto. What a delightful surprise. It was well prepared, slow cooked to bring out the gellatin and served with grilled mushrooms. I recommend this dish highly.
